The only way by train is via Beograd. Schedules for Trieste-Beograd are on www.bahn.de. From Beograd to Bar, there is a timetable on the Montenegrin Railways' site, www.zeljeznica.cg.yu. The journey will be long and fairly complicated.
It would be easier and almost certainly more comfortable to take an Italian train to Bari (www.trenitalia.com), then an overnight ship to Bar (www.montenegrolines.net).
