I have learned that we will disembark at the port in Monaco at 11:00. The ship will be departing at 19:00. We would like to go to Nice and see the old town and climb to the top to see the views etc.
1. How long will it take to get to Nice by bus or train?
2. Where do we catch either of them from the port where the ship will dock? How often do they run?
3. Is it worth going to Nice with this amount of time? I figure catching the train or bus at about 12:00 and leaving Nice at about 16:00 (3 hours in Nice?)
4. If there is time left over, would it more worthwhile stopping at Eze or strolling around Monte Carlo?

I understand you will have just 7 hours, maybe a few minutes more.
You could make it to Nice and back but this would mean you have no chance to see Monaco. And you will get nothing but a superficial impression of Nice.
IMO, Monaco is interesting enough to spend the 7 hours there and it is not worth spending a considerable part of your limited time on a bus or train.
Here my recommendations for Monaco:
- Stroll around the Rocher. Visit the Palace (it's worth a visit), the Church (with Grace Kelly's grave) and the quaint oceanographic museum & aquarium (which has been directed by Jacques Cousteau).
- Visit the Jardin Exotique, the exotic garden.
- Stroll around Monte-Carlo, see the Casino and Hotel de Paris (what about a glass of champagne in the lobby?). There is also a small Japanese garden.
- If you want you may visit the vintage car museum or the museum of puppets and automats.
- If you want to see something of the landscape you may hire a taxi that brings you to Eze Village and La Turbie (if you are able to find a party of 4 or 6 people you can share the fare - for six you need a minivan). IMO, La Turbie is even more rewarding than Eze - it is a Roman monument and the view is more spectacular).
So, plenty to do in Monaco. Save Nice for another trip. It deserves more than a few hours - at least three days.

You are welcome (although I am not French, but the Cote d'Azur is one of our favourite destinations for our summer holidays).
I agree with traveller1959. I spent 2 weeks in Nice last year and did a day trip to Monaco thinking that I would not enjoy it (with all those rich folks and their fancy yatchs), boy was I wrong. I thorougly enjoyed it and think it is such a beautiful place. Nice deserves more than a few hours.
