I would be grateful for any tips on local / Spanish cuisine, seafood and any other notable places to eat in Palma or in the countryside or northern region.

I haven't been to Palma for a number of years, but we have sent clients to a few of better restaurants including Tristán and Es Fum, but they are on the expensive side. La Bodeguilla is a little more modestly priced (www.la-bodeguilla.com).
