Madrid: Salamanca neighborhood hotels, restaurants etc

I posted before looking for hotel ideas. Thanks to all who answered there and gave us some good places to look. After some research based on our price range and availability,
we've narrowed it down to 2 or 3 hotels in Salamanca; We'd appreciate any comments about these specific hotels.
Catalonia Goya (was Catalonia Centro)
Vincci Soma
NH Principe de Vergara.

Also, though we plan to be all over the city, it would be nice to have an idea of some restaurants in the neighborhood .
Simple breakfast places
Lunch or dinner, preferably with multiple vegetarian options. No seafood or fish. Sandwich and salads are always good.
We love Moroccan food, is there anything reasonably priced nearby?

Anything else you can recommend in "our neighborhood"?
