You might want to try browsing hotels in Greece at Small Luxury Hotels of the World (www.slh.com). My first inclination is to recommend Santorini - especially since you mention eating and relaxing...but you'll have better luck with a pool on Santorini then a typical sandy beach.

Ooops. I may get in over my head here as I'm no expert at five star resorts, but the name Blue Palace springs to mind, and I think that's the one I remember driving by -- looking pretty spectacular. I'm referring to those annual polls in places like Conde Nast and Travel and Leisure. But a couple of Crete ones seem to come up.

On Santorini in the most beautiful village of Oia you have Perivolas Villas, Canaves, Esperas and Katikies. In Imerovigli you have the Santorini Princess and Pegasus. In Megalochori you have Vedema (Angelina Jolie stayed there while filming, very exclusive and private, but no caldera view).

We stayed at the Katikies Hotel in June in Oia. Can't say enough wonderful things about this hotel. Since you are looking for luxury please do look at the Katikies as it just doesn't get any better than this hotel. The place is gorgeous, the staff is outstanding, the food is delicious and the location perfect for Oia. We would go back in
a heartbeat. Have a great trip.

I stayed at Katikies in Santorini and the Royal Mykonian in Mykonos in June. Both were extraordinary. But while having conversations with the owner of the Royal Mykonian and the rep for Katikies, they told me about the problems of being what is considered a 5 star hotel in Greece. They readily admit that they are NOT Ritz Carltons or Four Seasons. They don't have the same style, the quality of the rooms (bedding, etc) or the amenities. They are required by law to build in the style of the island they're on. They are top of the line hotels for Greek Islands, but if you're expecting "LUXURY", you may be a bit disappointed.
That being said, one of the things these two hotels have in common are the number of steps in the hotel. The room we stayed in at Katikies was 140 steps DOWN from the entrance. Which meant that when we left the hotel to go shopping, sightseeing, etc, we had to walk UP those 140 steps. I should have been in better shape. And oh yes, the pool was 60 steps BELOW us.
Don't misunderstand me, the places were fabulous: Incredible people, wonderful meals, absolutely charming environment. I'd return in a heartbeat. Just don't go expecting a 6 star hotel.
