Long Term VISA

We are a Canadian family planning on travelling through Europe and Scandinavia for an entire year. Currently, we'd love to spend several months enjoying spring in France and fall in Germany but we're still in the early planning stage. This is a pure tourism trip.

Obtaining a long term VISA from France seems to include jumping through many hoops and showing up in person to the Vancouver consulate. Germany seems easier...

Anyone have hints/guidance/tips on which VISA will fit our needs and limit the potential for headaches and hoop jumping?
