London Hotel for our triop

My wife and I will be in London for 2 nights in the middle of July (a Monday and Tuesday night).

We are coming in via Stansted airport, and leaving via St Pancras station to Paris. We're both 30, no kids. We're not going to be out clubbing but are interested in the nightlife via restaurants and pubs. We'll also be seeing some of the attractions, of course.

Hotels seem to be very expensive for our dates. Initially I was trying to budget around $100usd per night but it doesn't look that will be even remotely close to possible. I'm thinking around $200usd now but could go higher if needed. We don't need a super high-end place but this is part of a trip to celebrate my wife's completion of residency so I don't want her to feel like we're slumming it.

I was thinking possibly the Victoria area (as I understad it the bus from Stansted has a dropoff there as well so that would be convenient from the airport), but I wasn't sure if that was too far out and/or if there were better options.
