Loire Valley - Transportation To/From and other Recommendations

In May, my husband and I will be in France for 9 days. I have booked 4 nights at Domaine de la Tortiniere, 10 km south of Tours. Then we have 4 nights at Le Citizen in Paris. We're both 50 yrs old (50 is the new 30...we like to do active things when traveling). We don't have a set budget, but we try to save money where it makes sense, and splurge for memorable meals/outings.

I need recommendations for getting from CDG to Tours (we don't anticipate having much jetlag, so driving would be okay; our flight gets in at 9:30 a.m.), then back to Paris for the second half of our trip, with a stop in Chartres to tour the cathedral. We would like to have a rental car in the Loire Valley, but could take a train to get there, if that's easier.

I've been researching the Loire Valley, but I'm having a hard time narrowing down the choices for things to do and see. We would love to ride bikes once or twice (half-days), hike, picnic, possibly rent a boat of some sort, visit some small villages, enjoy good food and wine, etc., in addition to seeing 3-4 chateaux. We could even drive a bit further one day to see something in a different area.

We've been to Paris twice, so we've been to the major sites (and may revisit several), but I would love recommendations for something to do/see in the vicinity of Le Citizen.
