Loire Valley itinerary

We will be staying at Chateau de Bournand (http://www.au-chateau.com),south of Chinon for four days, before taking a 7 day Burgundy Canal cruise on La Belle Epoque.
We have hired a vehicle to take a group exploring for two days, one day heading east and one day west.
My group does NOT want to visit more than 1 castle daily. Our day heading East will likely consist of visiting Chenonceau, then on to Amboise where everyone can explore independently for awhile (I will sneak away to Le Clos-Luce), then perhaps lunch. Afterwards, possibly visit 2 wineries, I am considering Le Clos du Tue-Boeuf and Domaine Vigneau-Chevreau.
On a 'free day', meaning no group activity, I plan to taxi to Chinon to visit the fortress, shop, have lunch and either rent a bike or go canoeing in the afternoon. There is also a winery south of Chinon I'd like to visit, Domaine de la Noblaie.
Any comments/suggestions on the above are welcome.
What I need to work on next is the day tour West of our accommodations. I'd love to visit some small towns, go somewhere nice for lunch, have time to shop and visit wineries.
Can anyone give recommendations based on their experiences? Really would like to focus on small towns if possible on this day.
