Lisbon to Figueria Da Foz to Barcelona to Nice

For my wife's 40th, we were thinking of Lisbon (2 nights) to the beach (2 nights) in Portugal, to Barcelona (4 nights) to Nice (4 nights) over the course of 2 weeks. I can't figure out
1. The best way to travel from location to location
2. What we should make sure we see in each location
3. If we were to drive, is there anything to see from Portugal to Barcelona and Barcelona to Monaco area?
Any thoughts? We like beaches, eating, nightlife is not too important, some culture/history/education, being active in the cities by walking around and seeing things that need to be seen in each location
