Lisbon--??? near by beach via train & walking tour

My husband and I (seniors) will be in Lisbon with a tour, but will be on our own from noon til night and start our tour the next day. I have read a couple of forum replies suggesting that one may take a train (Cais de Sodre train) to one of the beaches--- Cascais and Estoril, Can anyone suggest a simple itinerary - so that we can walk along a board walk??? maybe have a moderate taste of local cusine . what ever anyone can suggest in some detail to use our time wisely. thanks in advance.

-- Our Hotel will be next to the Rossio station
Is St jorge's a good place to have a moderate dinner on another night- Where do you suggest? in walking distance of Rossio station or is it hilly/
