To Les Eyzies, it's through Periguex. It is not a day trip - the area requires at least one whole day to visit (I assume you're looking to do the caves w/prehistoric drawings); if you want to really see more of the area, you'll need more time (there are guided tours, etc. or you can walk to the sites).

I've never done Carcassonne via train (we drove from the Perpignan area). Again, it's really not a day trip to this area.

How long are you going to be in France? Is this your first trip? Either area is wonderful, but 'worth it' may depend on how long you'll be in the country, and in what areas your interests lie....

Carcassonne is a very worthwhile day trip. We did it from Toulouse, a city not frequently visited by tourists, but a wonderful city (we were visiting friends). We had a lovely cassoulet at Saskia across from the cathedral for lunch. If you wanted to stay the Hotel De La Cite is very well located and quite posh. Another interesting medieval city nearby is Albi with its fascinating history and incredible cathedral. On the advice of our friends, we flew into Paris and then connected to a flight to Toulouse (the 4th largest city in France) I think I remember they told us that it was more than 600 miles to Paris and flying was a better choice. I certainly would recommend this uncrowded part of France, but if it's your first trip you would probably be better to stay with the more popular destinations.

Have been to both, enjoyed them and hope to go back. It haas been many years, but stayed at Hotel de la Cite in Carcassone and Hotel Cro Mangon (sp?) in Les Eyzies and thought they were both good. I think Carcassone would be fine to travel to by train since what you want to see is right there, but I wonder about Les Eyzies as I would want to travel in the area as well.
