Leaving Monday
I am still not sure about my first 2 days of my trip. I will arrive in Dublin at 0730 and get my car. I'm staying at the Faithlegg and thought I would drive there and drop my luggage off and catch some public transportation into Dublin. I'll just be there one day and I thought I might just walk around and sight see, no major tours. My next day we drive to Waterford and I see that there are many things to do between and around this area. Should I skip going to Dublin on the first day and head south to Glendalough for the day? The next day I will be driving to Waterford and I can't decide what we should do. Not interested in crystal factory. Should we go to Cashel and Cahir and then end up in Waterford for the night? So many things to see!

If it were me, I'd never drive the first day after arriving because I'd be out of commission from the effects of jet lag. I'd just wander around in Dublin, maybe take a coach tour.
It probably won't be as bad for you if you're from the east coast, but I live in inland Washington, and the time difference is 9 hours, which throws off my interior clock.
Driving on the opposite side of the road from what I'm used to isn't usually a problem as long as I'm rested, but on your first day in Ireland, it might be tricky.

Oh darn! It's the Fitzpatrick Castle. I just want to maximize my time. I can't figure out how to spend my day to Warerford. I'm sure we will get up really early and there is so much to see between Dublin and Waterford and so much west of Waterford. I can't figure out how to spend that day. The coast looked really pretty too but I am spending a lot of time on the coast the rest of the my time. Glendalough was listed as the 2nd best site to see in Ireland in my book. Should I spend the day I drive to Waterford by stopping there first or skip it?

I would see how you feel, Glendalough is fine enough but the Wicklow mountains "Can drain the soul from the Devil" according to my old grampa, mind he was hiding from the English up there. The Autumn colours are coming, the midge's will have gone and you won't be battling with coach loads of fellow visitors at the site.
If the weather is good then Wicklow if the weather is off then go via Kilkenny.
