Last night in Italy
My husband and I are leaving Lucca on a Saturday in September to get to Rome Fuimicino to fly out on the Sunday afternoon- flight leaves at 6pm.
We will have already done 3 days in Rome at beginning of trip.
a) What is the best way to travel to Rome from Lucca
b) Is there somewhere gorgeous(I love the sea) to stay on the way or should we go directly to somewhere like the Fuimicino village and relax for the day before we fly back to New Zealand.

Just go to Rome. You need to be near the airport the night before your flight home. But you don't need to be AT the airport.
Surely you won't have exhausted the sights of Rome in the first part of your trip. Alternatively, reorder your trip and move all your time in Rome to the end; use your first jet-lagged day to move to the furthest point on your itinerary.

3 days is by far not enough for a somewhat decent visit of Rome. Otherwise check the suggestions of Bob and Ann. I would just add Tarquinia (if you are interested in Estruscan stuff), Giglio Island (despite the sunken ferry) or any town in the hinterland, like Chiusi (Etruscan), Orvieto ....

stockles - i meant to say that Orbetello is on the train line from Genova to Rome and you can board it at Pisa Centrale.
very useful if you don't want to drive.
if you are driving, Massa Maritima is also a very interesting and off the beaten track sort of place.
