Last-minute Turkey trip help needed

Hello, need advice on a last-minute trip for about 8 to 10 nights. I'm thinking of simply purchasing my international airfare and arranging Istanbul hotel rooms now and doing the rest once there. Is it easy to get last minute airfares and hotel rooms once in Turkey?

My initial game plan is 3 nights istanbul, then go to Ephesus, then Pamukkale and/or a beach town in the south, and then fly to Cappadocia for 2 nights and then fly back to Istanbul. Is November too late in the year to do a gulet / blue voyage sail, even just for part of a day?

On a final note, I'm looking for a relaxing vacation and don't want to be hassled a lot, but I keep being told to expect it there traveling solo as a woman. Can anyone comment that has traveled this way there? I've been all over by myself, including the Middle East. Thanks.
