Last minute 14 day trip to Turkey! Help!

Hi! We are visiting Turkey for the first time and would really appreciate it if someone could help us with an itinerary.

Was an impulse purchase, so we didn't have too much to plan. We are both in our early thirties.

-Flying out from JFK on December 30th.
-We reach IST on December 31 at 4:45PM local time. What do for NYE?
-We have a hotel booked for two days in Istanbul Dec 31st through January 2nd.(Barceló Eresin Topkapi)

No other plans confirmed.

We will be in Turkey till the afternoon of the 13th (so a total of 14 days in Turkey).

Would love to travel through Turkey if possible.
- Not looking to drive/rent a car
- Open to both culutural, historic as well as hikes.

Please help us with an itinerary! Flights, hotels tips etc.

Much appreciated.

Also, we are planning on doing the Kebab tour walk in Istanbul. Worth it?
