What area did you have in mind, and are you talking about long or short term courses? There are all types of language courses/schools all over Italy, north to south.
I've taken short term, 2-4 weeks, courses in Rome at the Societa Dante Alighieri, and in Cefalu at Solemar Sicilia. Solemar offers lodging in seaside hotels or apts. Rome was many years ago, Sicily was more recent but both experiences were wonderful.
Most courses are "Italian for foreigners" and English will not necessarily be spoken.

Enjoyed our two weeks at Babilonia language school in Taormina, Sicily. Small classes, DH was in beginner group, early intermediate for me. People from all over Europe, and we went out to dinner together many nights - speaking Italian as best we could because it was the only common language (with a little English, German and French mixed in).

I did a five week program at http://www.clidante.it/
it's in piazza bologna. very pleasant and great staff. did it part of a study abroad program. coupled with using italian in daily life, i learned a lot, but it's all fading, as i didn't do much to follow up on it.
i wish i could find something that was like a "word of the day" in italian to expand my vocabulary. i'm sure there's some things out there on the internet
