KD Viking River Cruise with kids

Been awhile since I was on the forum. I need some help. We will be in the Cologne (Kohn) area in July with two grandchildren, 6 and 11. We would like to take a short cruise on the Rhine with the kids. We do not need to start in Cologne as we will be heading back to Frankfurt after the trip.I want to know where to start the trip to make it the most interesting for the kids, times of travel, what castles etc. might be of most interest for the kids. I'd also like an interesting place for all of us to stay the night before we head back. (a castle might be interesting, perhaps in a hostel?)
The stops can be in either direction. Although we do not know German, both the kids are fluent, so if we get in trouble we can ask the 11 year old.
