Itinerary tune up - 5 days Nice, Fr

Hello experts. We are in the final stretch of planning & those that have contributed have been amazing & generous with your time, guidance & insight to help a first-timer. Thank you again, part of travel is the adventure, but peace of mind is invaluable that you have the help of locals and previous travelers that can not be found from a travel or guide book.

With that, we have only 3 days until departure, & I am afraid that I may be trying to fit size 11 feet into size 8 shoes...which can make for blisters & an unhappy wife (2 of the most painful things to experience).

Please tell me if this is completely too much, and also if there is a better way to group the main areas of interest that we have planned to be more efficient. More is not always better, obviously, as I truly want us to be able to relax and enjoy each experience without overly being stressed/rushed. So if we are to drop something, which would it be? Also is there something you, yourself would add that is in close proximity to our main plan, this is good information as well.

Alors...How does this sound to you?

Friday ~6pm arrival 17 July (day 0):
staying in Vieux Nice, Rue de la Prefecture
- settle in, walk around, dinner nearby, possibly bus to Nuits de Sud if feeling energetic

Saturday (day 1):
- Explore walking the local nearby market & sites of old town, the Promenades, & Cimiez (Chagal, Matisse museums possibly)
- For the evening, dinner/strolling & nightlife in Antibes

Sunday (day 2):

Eze, Cap Ferrat and Villefranche-sur-Mer on the same day. Morning and lunch in Eze, early-to-late afternoon on Cap Ferrat/Villa Ephrussi de Rothschild and early dinner in Villefranche. From Eze, take the bus to Beaulieu-sur-Mer and from there is a really beautiful seaside walk (Promenade Maurice Rouvier) to Cap Ferrat.

Monday (day 3):
here's where things get crazy, what do you think?

*Pick up Car Rental
- For off the beaten path experience: Canyoning/whitewater hiking in Gorges du Loop (Grasse), approx. 9-13:00

- Lunch & a short stroll in Gourdon (14:00-16:00)
Drive back to the apartment, for a shower/change
- drive to Apricale/Dolceaqua for the late afternoon/evening.

Drive back to Nice, return car
(We could also possibly stay overnight in Apricale, returning to Nice in the morning)

Tuesday (day 4):
Morning: St Paul de Vence
Afternoon: back to JLP/Antibes, Picasso museum. the beach recommended from Ed, "La Plage", Boulevard Charles Guillaumont where it intersects Rue Ste Marguerite. We are not looking for significant beach time, but an hour or so to relax & take in the scenery & people. Depending on energy from here, was thinking we could enjoy either a stroll around Cannes or Biot.

Wednesday (day 5):
Morning: Train des Merveilles to Tende

if possible from there, someone mentioned bus to Menton and then train from Menton back to Nice.
Is this advisable?

Thursday (day 6):
departure day - unplanned. Breakfast & last bit of strolling, shopping/gifts,etc...
check out 10:30am & train back to Milan 2pm
