I will be going to Croatia in July for 17 days and I only have two destinations booked. I will be staying in Zagreb for 2 days and Plitvice Lakes for 3 days. So, 2 major questions:
Can you recommend car rental places?
Where should I go after Plitvice Lakes?
Likes: Roman ruins, Caves, hiking, food, horses, museums, night life, beach...

While it is touristy, Dubrovnik is well worth a stop. My favorite, though, is the island of Korcula.
Split has a nice roman palace and some night life. I would then also suggest visiting the islands. As mentioned, Korcula is a fun town & island, so are Hvar & Brac. I took a sailing/biking tour last year that left from Trogir and visited a handful of islands for a week. Highly recommend it if you are into those type of activities.

I thought Dubrovnik was prettier but you pass by Split on the way to Dubrovnik so you should stop and see Diocletian Palace.
I would try Autoeurope or Kemwell. They deal with all large car companies and they will match the lowest price you can find upto the day of departure.
This will give you ideas. We liked the islands of Hvar and Korcula and Dubrovnik is not to be missed:

I liked Dubrovnik better. Smaller, prettier, low key (until the cruise boats unload their passengers). There are some cool bars there and even some cool beach bars.
