Itinerary help - Kenmare to Dublin via Waterford

We are in the early stages of planning our trip to Ireland at the end of August. My question is - we have one night between stays in Kenmare and Dublin. However, I need to stop in Ballysaggart/Lismore area to visit family on the way. Can anyone recommend a place to stay (cute town, nice pubs) that we could go for that night? We would probably just be spending the afternoon with family and then would be willing to drive about an hour(?) to our next destination. Thanks in advance.

Looking for a suggestions for a town between Northern Waterford and Dublin to spend one night with a nice restaurant and a hotel or b&b for under $200/night after visit with family. This would be for the night of August 28th (Monday). I have looked at maps and done searches but I am looking for specific suggestions. Thanks.

I'm real hazy on the east coast area, but Kilkenny jumps out as a VERY popular spot...

Thank you for the suggestion, we will keep it in mind but I did the route planner and it is about 2 hours from Lismore. We were hoping to be a little closer. I would stay in Waterford City but I have mostly heard negative comments.

Dunmore East in Co. Waterford is very nice, its a little sea side village and really quaint.

How about Cashel? Looks like it's only an hour or so from Lismore and is on the way to Dublin. Any thoughts?

Cashel is a great area, with lots to see around it... The Rock of Cashel, (incredible and impressive), the Bru Boru cultural museum (ok, but not fabulous), Cahir Castle, Swiss Cottage.

I good sized city, Cashel is a great place to stop and plenty to do
