Italy - Rome, Tuscany area, Venice

Its our first time to Italy and putting together our plans, and have a few questions. We have 4 days to get from Rome to Venice as my husband has to be in Venice for business on a specific date.

Rome - planning to be here 2 days. What is good to do realistically the first day especially considering jet lag?

Is a day trip to Pompeii worth doing for one of the two days, or should we spend all our time in Rome?

Tuscany - we want to be able to relax in the country side for a couple days but also close to good wineries and olive oil groves, and possibly a really good dinner and wine pairing. Any suggestions where the best areas to stay, or must do tours or dinner experiences?

Is Florence a must see for one of our 2 days?

Venice - will be there 7 days, 2 of which I will be completely by myself. Any suggestions where to stay or do (or don't do) while I am on my own? I am a little nervous staying by myself without a companion.
