As you board the train, you have to stamp the ticket at a machine; the ticket will be stamped with a date and time. You have six hours to complete the trip, you can stop in the middle as long as you manage to get in time to your final destination. Actually, if the ticket expires while you are still traveling, you will be allowed on board to final destination without intermediate stops.

Those are regional trains where seat reservations are not required as they are on high-speed trains so you can just hop on any train - regional train and I think they are all regional trains - and yes do not forget to validate your ticket before boarding.

asps info applies if you buy the ticket in Italy. If you buy it online from Trenitalia, you will have a shorter time window. When you purchase regional tickets online, you are required to select your departure time and depart within 90 minutes of it (these are prevalidated). Travel must be completed within 4 hours of departure time.
There is really no advantage to buying a Lucca/Pistoia (5.30€) ticket if you want to stop enroute. Just buy two tickets, Lucca/Montecatini (4.30€) and Montecatini/Pistoia (2.50€). The price difference is only 1.50€ and you wouldn't need to be concerned about travel times.
What do you plan to do with your luggage when you stop or is this a day trip?

The railway stop named "Montecatini Centro" is much closer to the city center than the larger station named "Montecatini Terme-Monsummano". I do not believe it is possible to leave luggage at either station.
