Italian Food

I will get a menu translator but I have been fooled before, thinking that I understood the words while misunderstanding the meaning (a sandwich in Mexico that translated as cheese with cucumbers open face, was a grilled cheese sandwich with pickles). So I am asking you for your favorite foods, in italian with english translation. I like to try everything, but might pass on tripe and sweetbreads. I will be in Rome, Florence, Tuscany, and Venice in July. Any regional specialties that I should look for? Any thing to avoid?
