Dead sea will not be too cold, but even in the summer you can not swim in it (it is too salty, you will float).
Stellamarina, you make a mistake - eilat is at Red Sea; the sea will be cold in January.
In the winter can rain sometimes, but are many nice days, with sun and pleasant temperature. you need a jacket.
