Is Cognac worth an overnight between Sarlat and La Rochelle?

Final planning of my itinerary and I have seven nights after Sarlat before we need to be in Normandy for our one week apartment rental: Here is what I was thinking:

1 night : Cognac
2-3: La Rochelle
4-6; Brittany ( have not figured out exactly where I want to stay here so any recs appreciated)
7: overnight on Mont St Michel ( i have never been, I know its super touristy, but if I don't stay overnight I don't even want to go and deal with the crowds)

So the question is should I add a night to either La Rochelle or Brittany or stop in Cognac for one night?
