I'm sure folks are tired of me recommending venere, but it's a good reference builder.
It seems like you have your towns already, so here is a listing in Ireland by town.

I'd love to see what you've chosen as I'm going to be going there probably next Spring.
A sensible itinerary.
When it comes to accommodation it depends on your needs and tastes. I would recommend Ennis as a touring base for the last couple of nights and either the Temple Gate or Old Ground Hotels. The Grey Gables Guesthouse. or the Roan Tree Hostel.

Things to do apart from looking over a wall over a cliff.

In Dublin why not look into Trinity College's B&B program?
In the Bunratty area look at Headley Court
http://headleycourt.net or Bunratty Lodge next door
http://bunrattylodge.com .
In Ennis I have stayed at Eden Hill House, a working farm just south of town and almost a straight shot to Shannon Airport when you are ready to leave
http://bed-breakfast-ennis.com .
For Killarney I am looking at http://rosscastlebnb.com but I haven't stayed there so don't have a real opinion yet.
Kilkenny and Cork I can't help you with.
Have a wonderful trip!
