Ireland for work. Add on a week-Scotland? Netherlands?
Headed to Belfast (2 days), then Dublin (3-4 days), then Cork (week) for meetings and a conference. My friend and I want to add another country or 2 to the beginning of the trip. Would have about 7 days the first week of August. We are agriculture girls so countryside, sightseeing, cattle, adventure and pubs are of interest. Not big on museums. Any countries that would be easy to get to from US then back over to Belfast would be appreciated. I have already been through England. Loved it but liked Scotland more (was only there for a couple days though-saw the castle). Also, what kind of day trips should we look into for days in between work in Ireland. Should we just stay in Ireland for the week prior? Transportation tips are welcome.

Edinburgh will be extremely expensive at this late date due to the odd Festival or five.
Most of Scotland will be expensive as it's in the Scottish and English school summer holidays - the exception would probably be Glasgow which is an hour from Edinburgh

Ireland's 3 major cities are hardly rural Ireland so you could easily spend your time seeing Ireland. Scotland fine but I personally wouldn't aim for Edinburgh in August any other time but not August. and besides there is a whole lot more to Scotland than Edinburgh.

We enjoyed Glasgow tremendously, more than Edinburgh, to tell the truth.
Will you be renting a car? Rural Scotland is spectacular. I think it's a better match to your interests than the Netherlands.

Belfast has two aiports with loads of flights into Scotland/Wales/England. Use skyscanner and the map tool to see options.
But they also have flights into Paris and Amsterdam. Getting into the countryside from Amsterdam airport is dead easy just hop on a train, find a little B&B, hire a bike and you are away.
You could go further but...

thanks for all of your comments. We are also looking at how to drive from Dublin to Cork in order to see the most... Cliffs of Moher. Leave Dublin Friday at 5pm, drive to Galway? Saturday do cliffs and burren? then where should we head after that? We just need to be in Cork by 5pm on Sunday.

I'd go with Menachem on this. Either island would be good, but you may struggle to find accommodation in August. Vlieland is also an option, but again accommodation could be a struggle.
If you are happy renting a car then you could really get out into the countryside in the Netherlands.
There are farms with accommodation so you could meet some local farmers.
