Ireland - Cork for a few days

OK, so my friend and I are planning on flying in from Manchester (we're American though) on March 14th. Hopefully we'll find an early flight. We'll stay in Cork until the 16th when we'll be traveling to Dublin. This short period of time in Cork is the only part of the trip I have control over. There seems to be so much to see. I want to go to Blarney Castle at some point in these couple days. I know people have told me it's tourist-y, but I want to see it. Other than that, I need help! Where should we stay in County Cork? And what would be a do-able itinerary? She wanted to only use public transportation, but I will convince her to rent a car if that makes it easier.
