Ireland 7-Day Itineray --> Looking for help!

My husband & I are heading to Ireland in a week and are trying to finalize our trip. We fly into Dublin and have a car at the airport. We want to explore the southern part of Ireland & are thinking we will go south from Dublin and end in Galway before heading back over. We want to spend our last day in Dublin and have to drop our car off in in the city center that morning.

Any suggestions on how to get the most out of our trip? We have six nights in B&Bs (including one in Dublin) and we know we want to spend a night or two in Dingle and a night in Galway (but will likely need to get up right away the next morning to head to Dublin). If we head from Dublin, what would be the town you would stay the night in before continuing on? We were thinking we would like to stay in Cork one night.
