Hi,
Where to start? While in Cork, you should go along to the tourist office. Ask them for their farmhouse guesthouse book. In there you will find some truely wonderfull places to stay, and in many cases ( for a some extra expence) some special dining experiences too. The South West and West would be particularly well know for it seafood. If you like seafood, then you are in luck, as it is brought fresh from the Atlantic to the table daily in little restaurants all along the coast. There are some magical places to stop. Kinsale south of Cork, Glendore, South West Cork is one of my favourite places in the country. Then the Ring of Kerry, some nice restaurants in Kenmare, The Conor Pass and into Dingle. Dingle again a fishing port with some pleasent pubs and restaurants. Listowel and across the ferry from Tarbert to Clare. Lahinch , the Cliff of Moher, Lisdoonvarna ( if you are interested in SPA waters),
and then the unspoilt (windswept, definitely in October) Burren. This Limestone anomoly perched on the Atlantic coast, peer westward through the mists
hiding amongst its crags, Alpine flowers far from home. Aroung the Corner in Ballyvaughan is Monks restaurant, a truely special seafood experience. An hour away is Galway City, but thats another story.

I agree with Tim. West Cork is also my favorite place to visit in Ireland. We just returned from our fifth trip there and are always discovering new places. I too love Glandore, and Kinsale. I would also suggest Castletownshend,a small village on the sea. If you go there, eat at MaryAnn's which is suggested in the Fodor's guide. Bantry is another lovely town and be sure to visit the Bantry House. Drive along the small peninsulas and visit some wonderful small seaside towns and the Mizen Vision which is a lighthouse. Be sure to also visit Cohb which has a wonderful museum about Irish emigration and was the last port of call for the Titanic. Enjoy your trip!
