Budget?

The best hotel in Interlaken is the Hotel Victoria, which is situated directly between Interlaken Ost and Interlaken West.

Easy hikes:

Mannlichen to Kleine Scheidegg.

Lauterbrunnen to Stechelberg.

Grutscalp to Murren.

Schynige Platte

Most hotels in the BO will help you with hiking info.

Thin, only stays in Wengen

If you are interested in hiking, then you may as well stay in a town in the mountains rather than Interlaken. Grindlewald, Wengen, Murren, and Gimmelwald are all good bases for hikes.

IMO Gimmelwald is difficult to get to and get out of and does not give you anything special as a base. We have stayed in Interlaken and find it's great for the various BO trips you may want to take. We are going again in mid-Sept and staying at Hotel Beausite. Don't need to stay in "the best hotel" (i.e., the most expensive).

Lauterbrunnen would also be a good base.

I would recommend you to stay in Lauterbrunnen. It will give you an easy access to both sides of the mountains.
We stayed at hotel Staubbach. A good location and service.
Mannlichen to Kleine Scheidegg is a great hike.
Also you can hike from Lauterbrunnen to Stechelberg, see Trummelbach Falls on the way and take a bus from Strechelberg back to Lauterbrunnen.
A hike from Murren to Gimmelwald is very nice too.

I also recommend staying up in either Lauterbrunnen or Wengen. You are closer to all the hiking plus it is just lovely up in a small village. Mannlichen to KS is a great hike, Lauterbrunnen to the falls and back is also great.
