ignorance and train booking Osnabruck Paris Barcelona

Please treat me as a complete moron. I have read so many useful items on this site. I am finally ready to book tickets for a trip fromOsnabruck to Paris and on to Barcelona. I have not totally given up on a flight to Barcelona on Easy jet if I can legally attatch a small carryon bag to my backpackstraps and call it one hold bag. I am starting this in 2 weeks. I just get paniced when I go on the train sites and get ready to book. Can anyone out there give me step by step instructions on how best to book trains? My friend travelled by backpack for over a year and just booked at the train stations but I figured online booking and reservations could save me time and money. Do you think the backpck idea could work if it was securely attatched and less than the max weight? Thank you so much if anyone out there has the time and experience to help.
