Ideas needed for 3 nights outside of Paris in early May

My husband and I will be spending 8 nights in Paris at the begining of May. We'll pick up a rental car in Paris on a Tuesday morning around 10AM and are debating where we should go. We have been to Normandy and Provence on previous trips and are thinking we might like to see the Alsace or Champagne Regions. Would it work to base out of either Troyes or Langres and take day trips? I loved the markets in Provence, especially St. Remy, and wonder if we might find similar markets up North.

We are open to any ideas!

We need to be back to CDG for a 2:00 flight on Friday, allowing time to return the rental car (Hertz through Auto Europe) at CDG. I am hoping the rental car return area is clearly marked, does anyone know?
