Ideas for itinerary on Lake Como & restaurants with great views.

We'll have two full days on Lake Como. We are arriving by train in Varenna on Sunday afternoon August 31. Then we have two full days, Monday and Tuesday.
We want to spend those days touring the towns along the lake, seeing gardens, doing a little shopping and having wonderful meals. I noticed that several sites are closed on Mondays so we have to plan our time carefully. I would love to see the gardens at Villa Melzi, Balbianello , Monastero and Carlotta. (We might be able to do Monastero on Sunday afternoon.)
I have heard rave reviews of Ristorante Al Veluu ,but, I'm not sure how we would get there without a car? Ideas? Or other suggestions that would incorporate a realistic itinerary with great restaurants? Would getting to Villa d' Este take too much time?
