Ideas for 2-4 nights in Valencia province or nearby

I'm sketching out my Spring (March) 2011 trip to Valencia and Andalucia and am a little stumped what to do with 2-4 days. I've never been to Valencia and haven't ventured any further south on the East coast than Tarragona so this area is all new to me.

My plan is to spend 5 nights in Valencia. I'll arrive in early evening after a transatlantic flight so it's actually just 4 days. 2 days will be during Las Fallas and 2 days immediately following. After Valencia I have 2-4 days to play with before I head to Andalucia for a week.

I was originally planning on spending a couple of nights in Cuenca but now I'm thinking about adding a day to Valencia and visiting as a daytrip. I'm not too hip about cold weather (which to me is anything below 50 degrees farenheit) and I've also read that although the AVE stops in Cuenca it's not necessarily convenient to get to the city center. If I stay 2 nights I'll have my luggage to deal with. So this is why I was thinking of just doing as a daytrip - but could be persuaded to change my mind.

I've done a little research and Alicante looks interesting, somewhere I could probably relax and enjoy for a couple of days.

I love mid size and small cities and have been known to spend a couple of days just roaming around places most people visit for a couple of hours. I'm more into the experience of history and culture versus nature. The only thing I really dislike is the cold weather and touristy, built up, concrete beach resorts.

Not alot of posts on this area so I'm hoping to get some good feedback so I can share when I return.
