Iceland itinerary help

We (that's a family of 2 adults and 2 kids ages 9 and 11) are planning on short notice an 11 day trip to Iceland the last week of March and first week of April. After doing some reading, we think we've decided against doing the whole ring road - both because of the weather and our not wanting to change lodging and drive every day. We're planning to see Reykjavik then the southeast and then the southwest. It does require a day of backtracking - we would appreciate any advice on whether there is a smarter way to do this. Here is our itinerary so far:

Day 1 - arrive Reykjavik 7am, see town, stay in Rey Apartments for 2 nights
Day 2 - see Reykavik
Day 3 - pick up rental car, drive to Vik (2+ hours) see Seljalandsvfoss and Skogafoss on the way, stay at Volcano Hotel near Vik for 1 night
Day 4 - drive from Vik to Skaftafell (2+ hours) stay at Hotel Skaftafell for 3 nights
Day 5 - glacier walk, ice caves, ice lagoon boat trip
Day 6 - drive from Skaftafell to Vik (2+ hours), stay Guesthouse Carina in Vik for 1 night
Day 7 - Drive 2 hours to Laugarvatn, see Gulfoss and Geysir, stay Heradssolinn Hostel for 2 nights
Day 8 - snorkeling in Sifra fissure, pool at Fludir
Day 9 - drive to Snaefellsbar (3 hours) stay in Hellnar at Hotel Hellnar 2 nights
Day 10 - snowmobile tour
Day 11 - drive to airport and return rental car, flight at 4:50pm
Any general input on our itinerary would be appreciated, but also specifically:
- should we make an effort to go to or stay in Hofn?
- is 3 nights more than we need in Skaftafell?
- is there any reason to choose Stykkisholmur over Hellnar as a base for seeing the Snaefellsnes peninsula?
- any particular great thermal pools we should try to hit in the areas we'll be in?
