Iceland for 11 days in March

We had to cancel our plans to head south for spring break and have rerouted to Iceland for 11 days at the end of March/beginning of April. Normally I like to take my time with travel planning but this year we'll be a bit rushed so would appreciate help getting focused!

We are a family of four, with a 9 year old and 11 year old. We are interested in glacier hiking/snowmobiling, seeing geysers and waterfalls, swimming in thermal pools, seeing Reykjavik, and seeing the northern lights. We're also intrigued by the idea of snorkeling between the tectonic plates. We are comfortable with driving but would prefer to not be in the car for half of every day or to change lodging every night. We'd appreciate any help with an itinerary and lodging and views on whether we can see what we'd like using 3-4 home bases and whether we should consider some guided tours.

A few questions separate from the itinerary:
- my daughter is a vegetarian and from other posts it sounds like the food is meat and fish-heavy. She's not a particularly picky eater otherwise. Any restaurant or food suggestions would be great.
- I've read that the northern lights are easiest to see when the moon is new or crescent. Does it have that much of an impact? If so, we may save northern light watching for the end of our trip.
- what kind of clothes will we need? We have ski pants and winter boots but they're bulky and we'd want to bring them only if needed.
- will we have difficulty renting an automatic transmission car? My husband is much more comfortable than I am driving in dicey weather but doesn't drive a stick shift.
