How does this 15 day itinerary look?

Husband and I will be in Croatia this August 1st to celebrate our 20th wedding anniversary. We realize its peak season but it's the only time we could both get away.

Day 1 Fly into Dubrovnik from London (11am)

Day 2 Dubrovnik

Day 3 Dubrovnik - maybe a day trip to Kotar

Day 4 - Check out of hotel and rent a car and drive to Mostar. Overnight in Mostar

Day 6 - Islands (HVAR or any other recommendation? )

Day 7 - Islands

Day 8 - Islands

Day 9 - Split

Day 10 - Split

Day 11 - Drive from Split to Plitvice. Overnight there

Day 12 - Drive to Zagreb. Return car. Overnight

Day 13 - Train in the afternoon from Zagreb to Budapest

Day 14 - Budapest

Day 15 - Budapest

Day 16 - Evening flight to London

Can you please share your input on how this can be improved. We are in our 40's and enjoy culture and good wine and food.
