Hotel or B&B outside of Toulouse

We are traveling by car from San Sebastian to Narbonne and will be stopping near Toulouse for 1 night. We don't have much time to enjoy Toulouse so we don't want to get involved in the city. We do however need to stay near..not in the middle of nowhere. Perhaps a nice hotel and dinner. Any suggestions?
