There are several good choices in the area. Do you have a budget in mind? Your dates would also help.
You might want to take a look at Maribel's Guide to hotels in Madrid (www.maribelsguides.com). She reviews a number of hotels that may fit your needs.
Posade de León de Oro gets great reviews and is in the "tapas street" Cava Baja. Not many hotels in the Latina district itself.

Posade de León de Oro is only so-so, too much street traffic in the cafe/bar area. I wasn't that impressed with the location and it's bar wine prices are a bit high, but fairly common now for the tourist dominated area it's become.
Many nice places close by, look around Plaza Mayor/Plaza Santa Ana area. If you're looking for something very special, take a look at Reina Victoria at vibrant Plaza Santa Ana:
