hotel for 3 adults -last night in Rome

Looking for advice on a nice but not overly $$$$ triple room for my husband and I and our 25 yr old son for one night in Rome. We will be at the end of a two week trip that will begin with a one week stay in a Bologna apt with day trips to Verona Venice Modena and Parma (hubby and son are foodies). Then drive to Tuscan villa in Chianti region where we will meet up with my sister and brother in law and their son for a week. Back to Rome Saturday morning and flying home Sunday. My sister in law and family will be staying in an apt in Rome a few more days and then their son will be going on to Perugia for a summer semester abroad.

So most of the planning is done except for our last night which I would like to be special. We have been in Rome a few other times but do not to return to those hotels.. any great hotels you have been to? Centrally located of course so we can make the most of our one magical evening?
