Honeymoon in Italy Sept 15 - Need help

We are planning our honeymoon for 9/5 - 9/18 and need help with suggestions. Here is our plan
Arrive Milan 9/5, train to Cinque Terre - stay in Vernazza 3 nights
Train from Vernazza to Siena - pick up rental car and stay in Siena 4 nights and explore Tuscany:
1. Advice on a good Agritourismo or B&B in/near Tuscany
2. Need suggestions on which wineries and/or castles to see while in Tuscany
3. Would like to do one farmhouse cooking class - Where?
4. Is it worth it to try to get up to Dievole Castle with such a short stay in the area?
Drive to Umbria and stay 2 nights in Umbria
1. What is best base for exploring Umbria
2. Suggestions on accommodations, wineries, etc.
3. Is it worth it to visit the Ferentillo Mummies or Monteriggione for the medieval dress?
4. Is it worth it to drive to Saturnia for the springs?
On last day, drive to Orvietto - spend day in Orvietto, drop off rental car and take train to Rome.
4 nights in Rome
1. Suggestions on reasonable well located hotel/B&B in Rome (they are so expensive)

Any suggestions to modify the above itinerary are appreciated, We wanted to capture some seaside, some countyside, and some historical stuff (Rome). Are we too ambitious? Should we spend more/less time in any of these areas?
