Depends what you want to do - it certainly won't be beach weather and you are likely to get some rain. It will be cool enough that you will likely need jackets and sweaters, especially at night. Most places will have hear lamps on patios so you can sit outside but it will likely be chilly enough for you to want to eat inside.
Google average temperatures for the places you are thinking and that should give you an idea.

For a trip at that time of the year, most resort areas will tend to have many hotels and restaurants closed, the weather is uncertain and tumbleweed will blow through.
Malta would never be my choice for a romantic honeymoon, the Algarve is too out of season and most areas of Southern italy shut down for the winter.
I'd suggest the Costa del Sol where it's a lot busier year round and offers trips from Granada across to Gibraltar, Ronda and the White Villages, Seville and Cadiz. That's lots to do.
If you'd like a couple of days in Morocco, then catch a flight from Malaga to Marrakesh.

What's suitable to you? And suitable for what?
Look: Rome is on the same longitude as New York City and can get bloody cold. If you're seeking consistent 20C temps, Malta may be the only place on your list that fits the bill. And if my choice were Malta or someplace Down Under, I'd pick the latter seven days a week.

Rome may be on the same latitude as New York City, (I have not checked but take your word), but I have visited several times in January and have usually worn light jackets or even shirtsleeves. There is a chance of rain (also slim chance of snow) but in general I would say temperatures are close to balmy, for one coming from NYC.
Preeyanka: Do you want a resort vacation or a sightseeing holiday? If resort, I would not head for the European mainland. Maybe take a look at Canary Islands, or Madeira. Or the Caribbean.
or South Africa. You probably cannot go to the beach in swim suits on the European mainland in January. Yes, I have seen people do this, but they may hail from Greenland.

Don't forget that there are different climates and some micro-climates around Portugal.
Expect areas covered in snow, mainly in the center, north and interior of the country. Other areas are mostly milder and or more rainy. Cold in Portugal also means different things, and i guess for all Southern Europe countries the same happens, more or less.
For instance, for anyone living in Lisbon, minimum temps in Winter for some time are around 6-9º Celsius and that is considered way cold for them. People wear gloves, heavy jackets and scarves (lol - even so it's normal behaviour for such a warm city).
In some areas in the north and interior, temps. go below zero but people there are much more accustomed to that kind of weather.
Like the others said, you didn't say what is suitable for you.

Thank you all for your kind reply..
What i am looking for is a fun loving place with sight seeing and a good night life..
i dont mind the temperature having an average of 14C.
or even dipping down to 6C at night.
Planning to Start with Lisbon, Porto, Madrid, Seville, Granada, Barcelona, Rome, Venice, Florence...
please let me know if these places have suitable climate and is it a good option for our honeymoon (keeping in mind we are fun loving people)

StCirq, she says that she has 15 days in the OP. I was confused too by her last post, but I think that she wants 2 or 3 places from that list. As I mentioned up thread, the warmer temperatures will be further south. Costa del Sol again!

Europe does not have beach weather in winter. Southern will be much less cold than northern - but there is no swimming and even walking on the beach will need a jacket or sweater - and a nicer day - versus chilly rain.
Without knowing what you want to see/do it's hard to know what to reco.

I have 3 weeks in hand and would want to visit Lisbon, Porto, Madrid, Seville, Granada, Barcelona mainly... is 3 weeks less?
There is no other place where i can visit in the month of April which has moderate climate.
all other place like Aus, NZ is way hotter so have decided onto Europe.
What i want to know is whether there will be sufficient activities taking place in these cities?

What is moderate temperature for you? The average Barcelona temperature for that time of year is about 12 degrees. There is plenty to see and do in Barcelona to keep you busy for several days. The same for Lisbon. That is a moderate temperature in December and January.
Any major city will have lots of activity. The only things that change from summer to winter are outdoor activities such as outdoor music festivals. There are still plenty of indoor activities.
You can check average temps in any city and look at a guide book for activities that suit you and you will have a definite answer.

by all your replies it looks like December is not a beach climate even in Spain... I am totally confused with the destination as for us an average on 16-18 would be perfect...
we had Granada, Seville, Madrid and Barcelona and Lisbon in mind..

No - you are not getting that europe is a temperate climate - not a semi-tropical one.
There is no guarantee that anyplace in europe will be as warm as you want. And with the changing weather patterns - winters have been getting colder in some places.
for instance - Madrid is on a plateau in the center of the country - and in Dec the average high is 9. In Barcelona the average high is 14. Seville is 15. But the lows at night are about half the highs (so from 4 up to about 7).
I think you either need to pick a different part of the world - or come to europe sometime other than the dead of winter.
