Help With Our Last Three Nights in Portugal

We are a retired couple in our 60s who will be visiting Portugal for 2 weeks in late September. We would appreciate help with where to go in our rental car for the last 3 nights of our visit. We enjoy the countryside, walking, good food and drink and visiting villages. We fly out of Porto on a midday flight. We will have traveled from Lisbon (where we are spending a week) and from there are visiting Evora, Borba, Marvao and Vouzela where we spend two nights. We would like to take the Viator tour on our last full day that apparently covers some areas around the Duoro River, port wineries and a boat cruise.

One option that we are considering is that we should stay somewhere for two nights and drop the car at the airport, train into Porto and take the Viator tour on our last full day. This apparently covers some areas around the Duoro River and visits to some port wineries as well as a boat cruise. If this were the case we would stay in Porto for our last night. We are also very happy to spend these three nights in one village/town and visit places from there.
