Help with a few days on this itinerary (Dublin & southwest)

11 days in early June. Family of 3 (parents and 14 yr old daughter). Itinerary pretty well set, but having a little trouble with a day or two. Let me know your thoughts, oh Fodorites!
First time in Ireland for our daughter; 2nd time for us (last time was N. Ireland, Connemara, Dingle)

Arrive Dublin from Chicago early on Friday, Jun 5. Rent car and head west.
Stop at Irish National Stud then on to Tullamore area. Will probably stay at Annaharvey Farm & Equestrian Center for two nights with activities to include horse trekking and golf at Esker Hills.
Head to Doolin for 2 nights. Activities to include The Burren and Moher Cliffs.
Head to Kenmare for 3 nights. Activities to include Ring of Kerry, Killarney Nat. Park, Beara Peninsula.
Head east stopping at Rock of Cashel.
Here is where I run into trouble. Original thought was to spend one night in Kilkenny or near by. The next morning head to the Woodlands Falconry (near Rathwood) for their Hawk Walk/Experience which sounds amazing. Then on to Dublin airport to drop off car and stay the next 3 nights in Dublin. BUT this requires Sat, Sun, Mon stay in Dublin and I can't find any decent hotel for Sat night in city center - everything is booked (in our price range <200 with good reviews).
So my choices see to be to either...
[A] stay 2 nights near Kilkenny/Rathwood then get up and out quite early so we can drop car and still have 2 full days in Dublin (Sun and Monday)
or
[B] stay the 1 night in/near Kilkenny, do the Hawk thing, then drive to airport and drop car, and stay 1 night somewhere outside the city center (maybe in Swords?) then pack up and move again to stay in city centre last 2 nights.
Thoughts? Opinions? Any other options you can think of?
