Help please with Spain trip early May

I'm planning a 15 or 16 night trip to Spain beginning the first week of May, arriving in Madrid and returning home from Barcelona. We love to visit old towns/villages, eat outdoors, easy hiking. Coming from Miami, we're hoping for cool weather and no heat waves in Sevilla. Tentatively I have the following itinerary:

Madrid- 4 nights- I'd like to take a couple of day trips (public transportation) to Toledo, Segovia, El Escorial.
Take the high speed train from Madrid to Cordoba, pick up a rental car and
Cordoba- 2 nights
Sevilla-3 nights-
Valencia-2 nights
Barcelona- 3 nights

We're trying to avoid more than a 4 hour drive between destinations. I can stretch the vacation up to 16 nights, any suggestions where to modify the itinerary?
