Help!! Passport Control in Schiphol Airport!

Need some help here, please!

I am an airline crew and plan to travel from Rome to Amsterdam on a duty trip.

The thing is that even though I don't need the Schengen visa with my Taiwanese passport,
however, while arriving Rome from a non-Schengen country,
the crew members are exempted from passport control therefore I have no record of arriving the Schengen country, and it might cause some problems if there were a passport control.

So, my question is:
Do I need to show my passport at Schiphol Airport via KLM or Alitalia arriving flights from Rome?
Or in certain terminals travelers arriving from EU countries can skip the passport control and directly go to baggage claim?

And one last thing:
I heard of Ryanair operates Rome-Eindhoven flight,
anybody happen to know the situation in Eindhoven?
