Help! Off to Dubrovnik tonight

We could really do with some suggestions. We fly to Dubrovnik early Sunday morning I've booked one nights accommodation just outside the gates. We fly back from split and was planning to island hop out way back, but we're only there for 5 nights, fly back on Friday the 3rd June.

Catamaran leaves Dubrovnik at 4.30pm on Monday, should we stay longer in Dubrovnik and possibly do a day trip to the smaller islands, or head off to Hvar or Brac and base ourselves there as then we're closer to Split, I'm at a complete loss, not sure if it's best to book the ferry today (but then we have to decide what island we are going to) or wing it and see how we feel in Dubrovnik?

We are traveling with our two boys age 6 & 4 I'm half Greek so they don't need kids entertainment as such and are used to traveling around Greece. The odd beach, nice food and a bit of sightseeing.
