Help! Family of 4 and 4 grandparents to Paris this month

We are traveling to Paris at the end of June with my 8yo and 10yo son and daughter, along with all four grandparents. I would love to get any tips and recommendations.
My husband and I have been to Paris years ago, but when you are just a couple things are simple LOL.

I tried to find a vacation home or timeshare that could accommodate all of us, but I haven't had much luck. The hotels are outrageously priced and those around the $225 range are only double beds. That's a little tight for two adults.
I have reconciled to the fact that for us to have a nice place with bigger beds and Air Conditioning ( a must for us), we are probably going to have spend about $1000 a night for the group.

We won't have a car so we need to be close the train stops. If anyone has any suggestions i would appreciate it.

Our itinerary otherwise would be:

Monday- arrive in Paris and visit the Eiffel Tower for my daughter's birthday.
Tuesday - tour of the city.
Wednesday- day trip to Euro Disney.... I know!! but have to make this trip memorable for the little guy.
Thursday - Versailles
Friday - Loire Valley trip- Is this a good idea?

Saturday- relaxed day until we have our evening flight back.

I am a huge foodie, but the rest of the crowd no so much. Kids are die hard macaron, croissant, baguette and crepe fans. All the items they have been exposed to here.
